Why Buy Sprouted?

Did you know that until the Industrial Revolution, before the combine was invented, that grains were sprouted? Grains sprouted in the fields until farmers used or sold them, which made them MUCH MORE nutritious and easier to digest. It's true: sprouted grains are an old time-honored tradition that I re-introduced over 20 years ago in a safe, modern facility environment.

When a grain sprouts, it converts from a dormant seed to a living plant. Vitamins and minerals in the seed begin to multiply and B vitamins are created during sprouting. Phytates and phytic acid (anti-nutrients that inhibit your body's ability to uptake nutrition in the foods you eat) are broken down, making the grains easily digestible. A portion of the starches in the grains convert to simple sugars so sprouted grains don't spike on the glycemic index or cause bloating or gassiness. I used to explain that sprouted grains digest more "like a tomato, not a potato". And sprouted grains taste so much better than unsprouted grains. Sprouting removes all bitterness and brings out the unique taste of each individual grain.
