    I've been using this in my bread machine 2-lb loaf for about 3 years. For 544 grams total flour, I use 128 of this spelt, 128 of all purpose flour, and the rest is sprouted red wheat flour. I buy grains here and grind them myself. I use 2 tablespoons raw honey, 1 tablespoon Kerrygold grass-fed butter, 1 tablespoon organic safflower oil, water, salt, and yeast. Everyone who has tasted this bread, LOVES it. I've reduced the honey from 3 to 2 tablespoons, and haven't noticed a difference, probably because the spelt is naturally sweet. My 94 year-old diabetic friend who must limit her carbs thinks this loaf tastes like cake. She has gone from white to wheat in the 4 years I've cared for her. She's also off insulin, even though she eats this as toast every morning with butter, peanut butter, 1/2 tsp honey and 1/2 a banana.
