I have health issues which prevent me from eating regular grains/nuts/seeds. All my grains/nuts/seeds need to be sprouted. I have been using these sprouted flours for several months now to make gluten free sourdough crackers and English muffins. The are wonderful. The sourdough starter particularly likes the sprouted amaranth flour. It is frothy and rises up in the bowl each day. Combined with sprouted oat flour and millet flour the dough is almost elastic!

I like working with this flour. Used it in corn cake 50/50 ,it does give a darker color like most whole grains in baking products. Pie crust with other mixed flours. And used with other flours to coat fish before pan cooking . Nice texture and flavor especially with sprouted corn products . Will repeat purchase again, gladly.
