    We baked pizza with freshly ground einkorn berries. It does not have the same elastic strength as modern wheat but the taste is superior. The gluten quantity in einkorn is much lower (10% of modern wheat) but also its not the same type of gluten. Much less strength and easier to digest. You need to knead the dough very well if making pizza. I used buffalo mozarella and san marzano tomatoes and tons of fresh basil. This einkorn wheat has a strong wheat flavor which like since I have bean abstaining from all wheat. I personally think it tasted better than a store bought margarita pizza. I do not like the strong and chewy dough that modern wheat provides. If you have any gut issues its better to heal the gut first before trying any grains, including einkorn. My gut is healed now. Also a great idea to down kefirs or fermented drinks on a regular basis because things will go south at anytime given the amount of chemicals in our diet.
