Since pulses are being featured in this month’s recipes, here are some tips for substituting them in your favorite recipes to reduce calories and fat, and add fiber, protein, folate and iron.
TACOS: Replace ½ or all shredded pork or hamburger with cooked sprouted lentils.
LASAGNA: Replace ½ or all ricotta cheese with pureed cannellini or sprouted navy beans.
MUFFINS: Replace up to ½ of flour with sprouted garbanzo bean flour.
CHOCOLATE CHIP COOKIES: Replace ½ or all oil with sprouted lentil puree.
BROWNIES: Replace 1 cup of flour with 16 oz. pureed sprouted black beans, cooked and drained.
SANDWICH SPREAD: Replace mayonnaise with sprouted hummus.
BANANA BREAD: Replace ½ or all butter with sprouted navy bean puree.

April means Easter, full-on springtime, and longer days. Spring break comes around for many in April, too. With so much activity, this month’s recipes represent quick and fresh.
There are lots of “plant-based” milks that are trending as popular alternatives to dairy, so I’m sharing a couple of sprouted milk recipes you may want to try for added digestibility, great taste, and powered-up nutrition.

Brits refer to blenders as "liquidizers” – and rightly so. Their shape – generally narrower at the base than the top – combines with gravity to pull ingredients down into the blades, liquefying or at least turning them into fairly smooth purees. Use them mainly for smoothies, soups, sauces, and other things that are more liquid than solid.
Food processors are more like food choppers. When fitted with the standard chopping blade, they throw food out to the sides of the work bowl, creating a chunkier texture. They work best when the ingredients don’t vary widely in size, aren’t too wet to begin with, and when you need them minced or chopped rather than pureed. Use food processors for mincing meat for sausage, chopping gobs of onions, crushing graham crackers, or pulsing beans for hummus.
Notable exceptions: Blenders often create finer and fluffier bread crumbs than food processors do from crusty old bread. And food processors that have a drip-through oil dispenser in the top chute are a bit more convenient than blenders for making pesto.

My husband Jeff and I don’t celebrate birthdays and anniversaries in a big way. Usually, we’ll exchange cards and enjoy a special dinner together, but no big affairs. We don’t even stay up to ring in the new year. Sleep is the preferred celebration for that occasion.
In addition to Black History Month, Groundhog Day (2/2) and Valentine’s Day (2/14), I decided to look up some of the lesser-known celebrated days in February. There seems to be a reason to celebrate each day of the year these days. I think it’s a good thing! Maybe Jeff and I will celebrate a little more this year, starting with these special February days:

We’ve entered Indian summer here in southeast Alabama. October is historically the driest month of year. Dry weather is great news for our local pumpkin patch. The owners do a great job of creating a wonderful fall farm experience. Families and school children flock to the venue during October by the thousands for memories that last a lifetime. October also conjures warm aromas of spiced cider, apple and pumpkin-baked everything, and cinnamon. My favorite hearty soup and stew recipes make their way to my calendar in anticipation of cooler temperatures (hopefully soon!). Except for college football and less than 90-something temperatures here in the deep south, what could be better?!! War Eagle, y’all!

Happy Springtime!
April is my birthday month and this year marks a special milestoneas I enter a new decade of birthdays. Mother always made me a chocolate pound cake slathered with 7-minute frosting to celebrate, but my tastes have changed over the years. This month, I’m sharing my new favorite birthday cake along with a scrumptious sprouted grits soufflé that I plan to pair with grilled shrimp and a fresh garden salad to round out my celebratory birthday dinner. For an extra special birthday breakfast, I’m sharing my Super Easy Beignets recipe. I make the dough and keep it in the fridge to fry up a few of these light and airy, melt in your mouth pillows from heaven all week long.

I had the great pleasure to meet with more than 1,000 southeastern farmers, policy makers, and agricultural enthusiasts last month at the SSAWG (Southern Sustainable Agriculture Working Group) annual conference in Chattanooga, TN.
One of the highlights was a tour of Mitch Lawson’s Rise’ N Shine organic vegetable farm. Mitch’s high tunnel and field crop farm is one of Georgia’s largest CSAs (Community Supported Agriculture) located in northwest Georgia, just south of Chattanooga. Our group of more than 50 enjoyed learning from this prosperous farmer.
This conference included an emphasis on organic farming which has realized double-digit growth over the last decade, women in agriculture, organic livestock feeds, and organic grain production. To Your Health is looking forward to the day when we can purchase grains for sprouting right in our own back yard.
